Fermented homemade gel

So I've been making fermented oats for a while now, and I finally realized recently that fermenting my gel would be a great way to prevent it from spoiling in warm temperatures. Has anyone here tried this?

It should just be a matter of mixing up some lemon or lime juice, sea salt, a little starter culture (kombucha tea probably), fruit/grain/hemp nut mash, honey, etc and letting it sit out for a couple days. If I get a blender I might also try it with the fermented oats as the starter.
